Some of the most nutritious greens — spinach, kale, romaine, and arugula — are rich in vitamins A, C, and K, several B vitamins including folate, and potassium. A single cup of mixed greens clocks in at just 15–20 calories with 95% water content, making it one of the most filling, low-calorie foods you can eat.

Red vegetables get their color — and their nutrition — from lycopene and anthocyanins. Lycopene has been shown to reduce heart disease risk, protect the eyes, and fight infections, while anthocyanins may decrease the risk of brain disorders, cancer, and cardiovascular disease. Beets alone deliver the highest antioxidants of all the red veggies, along with folate, iron, potassium, vitamin C, and natural nitrates that improve blood flow and endurance. 

Best for: Heart health, immune support, anti-inflammation, and antioxidant protection.

We’re delivering fresh corn and avocados this we We’re delivering fresh corn and avocados this week, and what better way to eat them than with some delicious Texas Caviar?! 🌽🥑

This recipe is super easy and extremely delicious!

INGREDIENTS
 - 1 1/2 cups cooked black beans, drained and rinsed
 - 1 1/2 cups cooked black-eyed peas, drained and rinsed
 - 2 cups cherry tomatoes, halved
 - 1 cup corn kernels
 - 1 red bell pepper, stemmed, seeded, and diced
 - 1/2 cup diced red onion
 - 1 medium jalapeño pepper, finely chopped
 - juice of 1 lime
 - 2 large avocados, pitted and diced
 - 1/4 cup cilantro
 - tortilla chips, for serving

DRESSING INGREDIENTS
 - 2 tablespoons plus 1 teaspoon red wine vinegar
 - 2 tablespoons extra-virgin olive oil
 - 1 teaspoon cumin
 - 1/2 teaspoon cayenne
 - ½ teaspoon honey
 - 1 clove garlic, minced
 - 1 1/2 teaspoons sea salt
 - ½ teaspoon ground black pepper

METHOD
1. In a large bowl, stir together the black beans, black-eyed peas, tomatoes, corn, bell pepper, onion, jalapeño, and lime juice.
2. In a small bowl, whisk together the vinegar, oil, cumin, cayenne, honey, garlic, salt, and pepper. Pour the dressing over the bean mixture. Fold in the avocado and cilantro, and season to taste.
3. If time allows, refrigerate for 1 hour to allow the flavors to marry. Serve with tortilla chips.

Sliced cucumbers
2-3 Sliced Garlic Cloves 
Fresh Dill
Handful of any Peppercorn Blend
Handful of mustard seeds

Brine:
2 cups water
11/2 cups white vinegar
1/4 cup kosher salt
1 tsp sugar

Bring brine to a low boil until sugar and salt are dissolved.

Pour Brine over everything in a mason jar then seal and store in fridge.

Taste after 2-3 days in fridge!
